I would have attached the picture but the guys at the office ate all the cookies before I could take one!

Ingredients:

1 cup butter

1 cup brown sugar

1 1/2 cups flour

1 teaspoon salt

2 cups of oats

1/2 cup coconut

1 cup chocolate chips (or peanut butter Reese’s chips if you prefer or you could do what I did and go half and half)

1/3 cup sunflower seeds

1/3 cup sesame seeds

1 teaspoon vanilla essence

1/3 cup boiling water

1 teaspoon baking powder

What you do is:

Cream the butter and sugar until light and fluffy, add flour and salt and blend.Add baking powder to boiling water in big cup (this will bubble up so it needs to be a good size cup) add this mixture to your mixture. Blend in oats, choc chips, coconut and seeds to your mixture. Drop mixture (large teaspoon size balls) onto baking tray and flatten with finger tips to make little round cookie shapes. Bake at 180′C for +- 10 – 15 minutes (you’ll need to watch this as every oven is different and everyone likes different levels of crispness to their cookies) Generally till they are golden brown. Cool on a rack and then enjoy :)
